Smoky Soy Sauce Strawberry Jam
- Place frozen strawberries in a bowl. Microwave until completely thawed and puree in food processor. Set aside.
- Measure and mix ingredients for smokey concentrate. Set aside.
- In a separate bowl, measure sugar.
- Into a non-stick pot, measure lemon juice, pectin and strawberries.
- On high heat, stirring constantly, bring the contents of the pot to a rolling boil (a boil that does not stop boiling when stirred).
- Add the sugar to the saucepan. Return to a rolling boil and let boil for exactly 1 minute, stirring constantly.
- Remove from heat and add savory/smokey mixture. Stir until fully incorporated.
- Skim off foam.
